Our review for ChefsTemp Finaltouch X10 on pan-seared duck breast
We’ve used the ChefsTemp Finaltouch X10 ourselves on a duck breast and sweet potato and peas lunch, and it worked very well. The duck breasts we had were frozen and then left to thaw in the fridge overnight. We then took them out of the fridge and left them on the counter so they could get up to room temperature to ensure the difference between the middle and the outer part wasn’t too much. In the meantime, we prepared a sweet potato puree and mashed peas with butter.
Duck breasts in a hot pan, no lid, medium heat on the biggest burger. They began to sizzle, the fat began to render and pool into the grill pan, and we got ourselves a really nice and crispy skin (which we like). We flipped the breasts when we noticed the skin had turned golden.
We took the temperature several times as we wanted to see how the thermometer would read at different points. First, when the duck was halfway done, and then when it was done.
The temperature reading is instant, which is really handy when cooking something that relies on a specific temperature to be cooked perfectly. Now, notice our duck breast was done when it read 146 F and 148 F, respectively. In our opinion, this is the perfect moment to stop cooking the duck due to carryover heat and duck being similar to beef. A great duck breast is pink in the middle and juicy, and you can have it more on the rare side if you like.
The FDA recommends you cook poultry to 165 F, like with chicken, turkey, or goose. But we’ve always had our duck a little on the rare side, and we prefer it that way.
Now, we’re right-handed but could easily hold and angle the ChefsTemp Finaltouch X10 with our left hand, and found it very easy to use. And also very easy to read, with the big display and the large numbers.
We then had to clean the thermometer because duck fat is no joke and it sputtered like no tomorrow. The stove, backsplash, and counter needed a good cleaning after that too. As you can see it still worked just fine.
And the final result ! Juicy duck breast, pink inside, with nicely seared skin (complete with crispy sides too). Sweet potato puree and mashed peas with butter on the side, with a dollop of cherry jam on top. Plating is not our strong suit, but man was this delicious !
