Anejo Highball Recipe

A rum-forward highball that's meant to showcase the complexity of aged rum.

- 1.5 oz aged rum
- 0.5 oz orange liqueur
- 0.25 oz lime juice
- 2 dashes aromatic bitter
- 4 oz ginger beer
In a shaker combine rum, triple sec, lime juice, ice. Shake well.
Strain into Collins glass half-filled with ice.
Top with ginger beer, stir lightly.
Garnish with lime wedge or wheel.
- This is very rum-forward, so make sure you use a rum you love.
- Can tone things down with white rum, if you like.
- Barely sweet, relies only on ginger beer for sweetness.
