Ingredients
- 2 oz dark rum
- 1 tablespoon hot buttered rum batter*
- Boiling water, to top
- grated nutmeg and cinnamon stick to garnish
- 8 oz dark sugar
- 8 oz white sugar
- 8 oz softened unsalted butter
- ground cinnamon, cloves and nutmeg to taste
- 16 oz softened vanilla ice cream
Instructions
- For the batter: in a bowl add sugars, butter, spices, and ice cream. Mix until well incorporated and store in the freezer until needed
- For the drink: Add rum and batter into a heat-safe mug.
- Top with boiling (or very hot) water and stir until well combined.
- Garnish with grated nutmeg and a cinnamon stick, and serve.
Notes
A simpler batter you can make on the spot is heavy cream, dark sugar, and your choice of spices. It has much less milkfat (only whatever is in the heavy cream) but it's far easier to drink than just adding a dollop of butter.
Tips & Tricks
Mix in a splash of heavy cream or half-and-half to make the drink even creamier and richer.
Add a pinch of allspice or star anise to the batter for more complex spiciness.
