What is Tequila Honey Bee?
Tequila Honey Bee is a sweet and simple mix of tequila, honey syrup, lemon juice, and a dash or two of aromatic bitters. It follows a similar template to Bee’s Knees and Honeysuckle, namely blending a spirit with lemon juice and honey syrup.
This is a particularly interesting mix, since honey syrup is very similar in flavor to agave syrup. So it will blend right into tequila’s base notes, which is quite fitting !

Notes
When is this drink best ?
Tequila Honey Bee works best as a summer cocktail, and perhaps even a spring cocktail. The lemon and honey give the drink a comforting and refreshing note, which fits perfectly with the warm season.
And since this is more of a grown-up, dressy drink I’d see it served at a nice dinner or brunch.
My thoughts on Tequila Honey Bee
I like it, I think it’s a very well thought out cocktail. The tequila is still noticeable but not overwhelming, and the lemon juice brings out a spiciness in tequila that no other can. Honey and lemon always go well together, and together they create a nice sweet and sour background.
The aromatic bitters do add a bitter note, but they also add a lot of depth of flavor. I think they also go well with honey syrup, and also add a beautiful color.

Notes, substitutes, and tips
To get your honey syrup right, make sure you mix the honey with warm water. If you mix it with cold water it will still mix, but you’ll have so much more stirring to do. If you don’t stir (and thus thin it) enough it can and will stick to the ice when you pour it in the shaker.
You can use any tequila you like, but I think reposado would offer a sweeter, more vanilla-y note than other types.
