Ingredients

  • 1.5 oz gin (Empress 1908)
  • 0.75 oz fresh lemon juice
  • 0.75 oz simple syrup
  • 2-3 dashes lavender bitters
  • sparkling wine to top off
  • (optional) lavender sprig

Instructions

  1. In a shaker add ice, gin, lemon juice, simple syrup, and lavender bitters, and shake very well.
  2. Strain into chilled coupe glass.
  3. Top off with sparkling wine, garnish (if you want), and serve.

Notes

You can also present this in a champagne flute, in which case be very careful with spills !
