Raspberry lime rickey may not ring a bell, but it’s a gin and club soda highball that used to be very popular a few decades ago. You’ll understand why once you’ve tried it.

What is Raspberry Lime Rickey?
The raspberry lime rickey is actually a riff on the classic gin rickey, which was based on the bourbon rickey, created by Colonel Joe Rickey, in Washington D.C. back in the late 1880s. The gin rickey became somehow more popular than the bourbon rickey, so it stuck around and eventually people started adding this or that syrup to make it more interesting.
In this instance, the raspberry lime rickey involves lime juice, raspberry syrup, gin, and club soda. It’s a tall refreshing drink and it used to be much more popular in the mid 1900s. Here’s how to make one.
Raspberry Lime Rickey Cocktail Recipe

- 2 oz gin
- 1 oz lime juice
- 0.5 oz raspberry syrup
- 4 oz club soda or to top
Instructions
- Build in glass, adding club soda last. Stir gently.
Notes
When is this drink best ?
The raspberry lime rickey is going to to work amazingly well in summer and spring, due to the very low alcohol content, the high carbonation, and the sweet and sour mix of lime and raspberry syrup. Really it’s a drink you’ll easily associate with dappled shade, late Saturday mornings, and knowing there will be fresh cookies today.
Since it’s such a refreshing and casual drink, I could easily see the raspberry lime rickey as a brunch drink, a lunch drink, something to serve at a family gathering, or even just something to enjoy by yourself on an early afternoon.
My thoughts on Raspberry Lime Rickey
I liked the raspberry lime rickey a lot, I found the raspberry and lime to be pleasantly sweet and sour, and the club soda thinned everything out just right. Of course, there’s some gin in this, but compared to the amount of club soda, it’s not that much. Which turns this into a low alcohol drink that you can just sip on for as long as you want (or as long as the bubbles last).

Notes, substitutes, and tips
This is a very simple, very refreshing drink. It has a very pale pink color and the raspberry isn’t too sweet, but if you want more you can bump it up from 0.5 zo to 1 oz and keep the rest of the recipe the same.
